3 cups flour
1/2 tsp baking soda
1 cup butter, room temperature (microwave for 40 seconds at 60% power if you are like me and never have soft butter on hand. or plan baking ahead)
1 cup brown sugar
2/3 cup sugar
2 eggs, beaten
1/2 tsp mint extract
1 bag (11.5oz) milk or dark chocolate chips (i usually use Ghiradelli milk chocolate)

cream butter and sugars
Add beaten egg and mint
add baking soda, add flour one cup at a time to make sure it all gets evenly mixed
add chocolate chips
refrigerate for one hour.

bake for about 10 minutes at 375 degrees. cookies should be slightly golden brown around the edges. if you like crispier cookies, add on a few minutes :)

devour.

i added about 1/4 more mint extract than the recipe calls for as I wanted a stronger mint. the amount called for gives it a nice tang. You can also crush mint candies and add them in, but the mint extract is quick and easy.

...my house smells of chocolate and mint right now. very happy camper.

mint and chocolate are two of my favorites. I will see what other recipes I dig up :)
